diana's presidential bison skillet meal

Have ya ever tasted bison? My dad and I tried it one day in 1980's driving up to WI after stopping at a farmers market. I lived in Illinois most of my life but found a Farmstuff delivery service. One week I ordered fresh Bison and then created this recipe. Oh, it is good! Honor President Obama's dearest animal, the Bison. You'll be surprised at the strong flavor!

Ingredients

  • 1 can goya red kidney beans, drained and rinsed (15 oz)
  • 1 cup fat-free beef broth
  • 1 teaspoon sea salt
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • 12 ounces uncooked ground bison
  • 6 small baby potatoes, microwaved until tender (3 min.)
  • 1/2 cup spaghetti sauce, low-fat
  • 1/2 cup brown rice, cooked

How To Make diana's presidential bison skillet meal

  • Step 1
    Brown bison in skillet sprayed with canola oil cooking spray.
  • Step 2
    Cut tender potatoes into thin slices.
  • Step 3
    Add broth, beans, potatoes, sauce and spices. Cover and simmer for 30 minutes until cooked through.
  • Step 4
    Serve warm with 1 C. brown rice or whole wheat pasta. Serving size 1 C.
