diana's presidential bison skillet meal
Have ya ever tasted bison? My dad and I tried it one day in 1980's driving up to WI after stopping at a farmers market. I lived in Illinois most of my life but found a Farmstuff delivery service. One week I ordered fresh Bison and then created this recipe. Oh, it is good! Honor President Obama's dearest animal, the Bison. You'll be surprised at the strong flavor!

Ingredients
- 1 can goya red kidney beans, drained and rinsed (15 oz)
- 1 cup fat-free beef broth
- 1 teaspoon sea salt
- 1 teaspoon dried rosemary
- 1/2 teaspoon black pepper
- 12 ounces uncooked ground bison
- 6 small baby potatoes, microwaved until tender (3 min.)
- 1/2 cup spaghetti sauce, low-fat
- 1/2 cup brown rice, cooked
How To Make diana's presidential bison skillet meal

Step 1Brown bison in skillet sprayed with canola oil cooking spray.

Step 2Cut tender potatoes into thin slices.

Step 3Add broth, beans, potatoes, sauce and spices. Cover and simmer for 30 minutes until cooked through.

Step 4Serve warm with 1 C. brown rice or whole wheat pasta. Serving size 1 C.
