This is really good. If you like eggnog but don't like the fat. This is a reduced fat version of the thick rich holiday drink.

Eggnog is a Christmas favorite of mine. But, with so many calories, I do try to limit my consumption. After trying this recipe I can enjoy it even more! This eggnog was really yummy ... didn't miss the calories at all. The Test Kitchen

  • 1/4 c
    cold water
  • 1 Tbsp
    unflavored gelatin
  • 1/3 c
  • 2
    large eggs
  • 2 tsp
    vanilla extract
  • 1/4 tsp
    rum extract
  • 1 tsp
  • 1/2 tsp
  • 3/4 c
    boiling water
  • 2 c
    ice water
  • 1 c
    powdered fat free milk
  • ·
    reduced fat whip cream if desired

How to Make Skinny Eggnog


  1. In a blender combine the cold water and gelatin. Let it sit for a couple of minutes. Add powdered milk, Splenda, eggs, vanilla, Rum extract, cinnamon and nutmeg.
  2. Blend on low for 30 seconds. Add the boiling water. Blend for another 30 seconds on low until gelatin is dissolved. Add ice water and blend on high for 2 minutes.
  3. Sprinkle cinnamon on top and a reduced fat whip cream on each serving.
