Ingredients
- 1/4 cup cold water
- 1 tablespoon unflavored gelatin
- 1 cup powdered fat-free milk
- 1/3 cup Splenda
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/4 teaspoon rum extract
- 1 teaspoon cinnamon, plus more for topping
- 1/2 teaspoon nutmeg
- 3/4 cup boiling water
- 2 cups ice water
- - reduced fat whipped cream, if desired
How To Make skinny eggnog

Step 1In a blender, combine the cold water and gelatin. Let it sit for a couple of minutes. Add the powdered milk, Splenda, eggs, vanilla, rum extract, cinnamon, and nutmeg.

Step 2Blend on low for 30 seconds. Add the boiling water.

Step 3Blend for another 30 seconds on low until gelatin is dissolved.

Step 4Add the ice water.

Step 5Blend on high for 2 minutes.

Step 6Divide into glasses. Top with reduced fat whipped cream and a sprinkle of cinnamon.
