I know that someday it’s going to get warm enough around here to enjoy a refreshing beverage. I played about with the ingredients to achieve the right balance, and think this version has a nice smooth taste.

So, you ready… Let’s get into the kitchen.

  • 2 c
    fresh mango, cut into chunks and frozen
  • 8 oz
    pineapple juice
  • 4 oz
    coconut cream, more on this later
  • 1/4 c
    condensed milk, sweetened
  • 1 Tbsp
    fresh clover honey
  • 1 tsp
    vanilla extract
  • 1 c

How to Make Drink Essentials: Mango Pineapple Delight


  2. Gather your Ingredients (mise en place).
  3. Chef’s Note: Take a can of coconut cream and place it in the refrigerator, preferable
    When you open the can, the cream will have solidified and separated from the liquid.
    Drain off the liquid, and reserve the solidified cream.
    That’s what I want you to use in this recipe.
  4. Place all the ingredients into a blender.
  5. Blend until smooth.
  6. Chef's Note: If you want to make this an "adult" beverage, you could add about 6 ounces of good rum.
  8. Pour into a glass and enjoy on a nice warm Summer afternoon. Enjoy.
  9. Keep the faith, and keep cooking.
