I know that someday it’s going to get warm enough around here to enjoy a refreshing beverage. I played about with the ingredients to achieve the right balance, and think this version has a nice smooth taste. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 2 cups fresh mango, cut into chunks and frozen
  • 8 ounces pineapple juice
  • 4 ounces coconut cream, more on this later
  • 1/4 cup condensed milk, sweetened
  • 1 tablespoon fresh clover honey
  • 1 teaspoon vanilla extract
  • 1 cup ice

  • Step 1
    PREP/PREPARE
  • Step 2
    Gather your Ingredients (mise en place).
  • Step 3
    Chef’s Note: Take a can of coconut cream and place it in the refrigerator, preferable overnight. When you open the can, the cream will have solidified and separated from the liquid. Drain off the liquid, and reserve the solidified cream. That’s what I want you to use in this recipe.
  • Step 4
    Place all the ingredients into a blender.
  • Step 5
    Blend until smooth.
  • Step 6
    Chef's Note: If you want to make this an "adult" beverage, you could add about 6 ounces of good rum.
