As I pen these words, we are experiencing some of the coldest weather in recent memory. It started four days ago and is supposed to continue for at least another week. Dark gloomy skies with a lite snow constantly falling. The highs are well below the freeing mark, and wind chills are in negative territory. Okay enough of that… How about a nice refreshing hot cocoa? So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 3/4 cup filtered water
  • 5.4 ounces coconut milk, full fat variety, 1 small can
  • 2 tablespoons cocoa powder, unsweetened variety
  • 1 tablespoon fresh clover honey
  • 1 pinch salt, kosher variety, fine grind
  • 1/2 teaspoon vanilla extract
  • OPTIONAL ITEMS
  • 1 - 2 pinches ground cinnamon
  • 1 - 2 pinches ground nutmeg
  • 1 pinch cayenne pepper
  • 1 ounce peppermint schnapps
  • 1 ounce bourbon

How To Make beverage essentials: dairy free hot cocoa

  • Step 1
    PREP/PREPARE
  • Step 2
    You will need a saucepan, and a good mug to make and serve this recipe. That is about it.
  • Step 3
    Gather your ingredients (mise en place).
  • Step 4
    Add the water, coconut milk cocoa, honey, and salt to a small saucepan over medium heat.
  • Step 5
    If you are adding any of the optional items, do so now.
  • Step 6
    Whisk constantly, until all of the ingredients are dissolved and begins to boil, about 4 – 5 minutes.
  • Step 7
    Reduce the heat to medium low and lightly simmer for an additional 6 – 8 minutes, stirring every minute or so.

    Remove from the heat and stir in the vanilla extract.
