reduced fat eggnog
I have a couple of versions of Eggnog. This is a new reduced fat version I created. It has 4 1/2 grams of fat and only 120 calories per serving. Adding Rum will add an additional 60 calories per serving. I hope you all enjoy this version. Happy Holidays, and Merry Christmas to you and yours!

Ingredients
- 4 - egg yolks
- 3 1/4 cups fat free skim, or 1% milk divided
- 1/3 cup sugar or sugar substitute
- 1 teaspoon cinnamon
- 3/4 teaspoon nutmeg
- 1-2 teaspoon corn starch ( depending on preference of thickness of drink)
- 1 teaspoon vanilla , or rum extract
- 4 - shots of rum optional
- - low fat whip cream optional
How To Make reduced fat eggnog

Step 1Mix 1/4 cup skim milk with the corn starch. Mix well, and Set aside.

Step 2Place 3 cups Skim milk, and egg yolks in a saucepan. Whisk together. Add in cinnamon, sugar, and nutmeg. Bring to a boil while constantly whisking.

Step 3Whisk in the corn starch mixture. Whisk while boiling. Add in extract. Mix well. Remove from heat. Cool and refrigerate. Shake well begore serving. Optional: Serve with a shot of Rum per serving, Garnish with nutmeg and low fat whip cream.
