This is a recipe my son gave me and it is super-good! Forget those little plastic cups you buy at the store. This is the real deal AND it's heart-healthy! 10-03-15

Ingredients
- 2-3/4 cup fat-free milk
- 1/3 cup sugar
- 2 large egg whites, lightly beaten
- 3 tablespoons quick-cooking tapioca
- 3/4 teaspoon vanilla extract
- 1 pinch ground nutmeg
- ¼ cup slivered almonds, dry-roasted (about 1 oz.) - optional
How To Make heart-healthy tapioca pudding

Step 1In a 2-qt. saucepan, mix milk, sugar, egg whites, and tapioca and let stand for 5 minutes. Bring mixture just to a boil over medium heat, stirring constantly. Remove from heat and stir in vanilla and nutmeg.

Step 2Transfer pudding to a medium bowl. Place plastic wrap directly on surface and let pudding stand at room temperature for 20 minutes.

Step 3Stir and pour into 4 individual serving dishes. Sprinkle with almonds if desired. Serve warm or chilled.
