betty's microwave "steamed" christmas pudding

I had this recipe given to me by a lovely friend and I'm keeping it here for safe keeping. A "steamed" style fruit pudding using dried fruit. I am yet to make this and love the idea of using my microwave rather than spending hours steaming a pudding. Recipe is based on a 1000 watt microwave.

Ingredients

  • - 1 pound dried mixed fruit
  • - 3.5 ounces (100g) dried dates, chopped (use kitchen scissors)
  • - 3.5 ounces (100g) dried prunes, seeds removed and choppe
  • - 5 ounces (150g) butter
  • - 1 teaspoon bicarb
  • - 1/4 cup brandy
  • - 1/2 cup firmly packed brown sugar
  • - 2 eggs, lightly beaten
  • - 1/2 cup orange marmalade
  • - 1 teaspoon mixed spice
  • - 1 teaspoon ground cinnamon
  • - 1 cup flour
  • - 1 cup self raising flour

How To Make betty's microwave "steamed" christmas pudding

  • Step 1
    Grease a 10 cup capacity microwave safe glass or ceramic pudding bowl and line with baking paper.
  • Step 2
    Place the dried fruit in a butter with 1/2 cup of water n a separate medium/large bowl and microwave for 2 minutes on high or until butter is melted and mixture is hot. Add in the bicarb - it will fizzle and grow! Set aside for 20 minutes to cool.
  • Step 3
    Add everything else and stir well. Spoon into the prepared bowl and level the top. Cover with baking paper and secure with kitchen string.
  • Step 4
    Place a microwave safe plate upside down in the middle of the microwave plate. Place the pudding bowl in the middle of the upside down plate.
  • Step 5
    Microwave on a medium-low heat (30%) for 25 minutes. Stand for 15 minutes. Remove the paper and string and turn onto a serving plate. Serve warm with lashings of custard and cream!
