Taste of Home entry by Lynn Hamilton says," No one ever guesses these sweet dessert squares are made with zucchini!" I have change up the recipe to suit my family's taste, but the concept is still the same- I just added a few different ingredients.

Ingredients
- CRUST:
- 5 cups all purpose flour
- 4 teaspoons granulated sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 1/2 cups cold solid buttery crisco or regular cold butter
- 2 large egg yolks, reserve whites
- - ice cold water
- FILLING:
- 8 cups sliced peeled zucchini (about 5#)
- 2/3 cup fresh lemon juice
- 3/4 cup brown sugar, firmly packed
- 1/4 cup granulated sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cream of tartar
- 3 tablespoons all purpose flour
- 2/3 cup chopped walnuts
- 1/2 cup golden raisins, optional
- DRIZZLE:
- 1 cup powdered sugar
- 2 tablespoons milk

Step 1Preheat oven to 375^. Crust: Combine dry ingredients, cut in cold shortening. Place egg yolks in a measuring cup and stir with fork until blended. Stir in enough cold water to make just a cupful. Sprinkle gradually over dry ingredients; toss with fork to make soft dough. Roll out 1/2 the dough and line a jelly roll pan (15x10-inch)with this 1/2 on bottom and up sides and lip. Set aside.

Step 2Filling: In a large saucepan, bring zucchini and lemon juice to a boil. Reduce heat; cover and simmer for 5-6 minutes or until tender. Drain. Stir in the sugars, cinnamon, nutmeg cream of tartar and flour. Cook and stir for 2-3 minutes. Stir in nuts and raisins if using.

Step 3Spread filling evenly over crust. Dot top with a little butter. Top with remaining crust. Seal and crimp edges. Brush with a little milk and sprinkle top with sugar and cut vents for steam or prick top all over with a fork.

Step 4Bake in oven for about 25-30 minutes or until golden brown, Cool on wire rack. Combine drizzle ingredients and drizzle over top when cool. Cut into squares.
