Can't believe how good this is and it's gluten free and low carb!! So easy to put together too!! Flavor was even better on the second day! I don't know about a third day.. this didn't survive that long!

Ingredients

  • CRUST:
  • 1 1/2 cups almond flour
  • 3 tablespoons butter, melted
  • 1 tablespoon ground flax seed
  • 2 tablespoons stevia in the raw
  • PIE FILLING:
  • 90 grams sliced fresh strawberries (about 8 berries)
  • 1 box sugar free white chocolate instant pudding mix (1 oz)
  • 1 cup milk
  • 6 ounces cool whip

How To Make strawberry white chocolate mousse pie -- low carb

  • Step 1
    Heat oven to 350 F. Melt the butter and mix the ingredients for the crust up in the pan and press into place with your fingertips.
  • Step 2
    Bake for about 10 minutes until the crust is beginning to brown. After 8 minutes, check every minute or so, because once it starts to brown it goes quickly. Allow to cool completely.
  • Step 3
    Slice strawberries thin and spread in bottom of cooled crust.

    Step 4
    In a mixing bowl, combine pudding mix and milk until thickened. Fold in cool whip until well blended. Spread over strawberries in pie plate. Chill until ready to serve.
