strawberry white chocolate mousse pie -- low carb
Can't believe how good this is and it's gluten free and low carb!! So easy to put together too!! Flavor was even better on the second day! I don't know about a third day.. this didn't survive that long!

Ingredients
- CRUST:
- 1 1/2 cups almond flour
- 3 tablespoons butter, melted
- 1 tablespoon ground flax seed
- 2 tablespoons stevia in the raw
- PIE FILLING:
- 90 grams sliced fresh strawberries (about 8 berries)
- 1 box sugar free white chocolate instant pudding mix (1 oz)
- 1 cup milk
- 6 ounces cool whip
How To Make strawberry white chocolate mousse pie -- low carb

Step 1Heat oven to 350 F. Melt the butter and mix the ingredients for the crust up in the pan and press into place with your fingertips.

Step 2Bake for about 10 minutes until the crust is beginning to brown. After 8 minutes, check every minute or so, because once it starts to brown it goes quickly. Allow to cool completely.

Step 3Slice strawberries thin and spread in bottom of cooled crust.

Step 4In a mixing bowl, combine pudding mix and milk until thickened. Fold in cool whip until well blended. Spread over strawberries in pie plate. Chill until ready to serve.
