Can't believe how good this is and it's gluten free and low carb!! So easy to put together too!! Flavor was even better on the second day! I don't know about a third day.. this didn't survive that long!

Ingredients

CRUST:

1 1/2 c
almond flour
3 Tbsp
butter, melted
1 Tbsp
ground flax seed
2 Tbsp
stevia in the raw

PIE FILLING:

90 g
sliced fresh strawberries (about 8 berries)
1 box
sugar free white chocolate instant pudding mix (1 oz)
1 c
milk
6 oz
cool whip

How to Make Strawberry White Chocolate Mousse Pie -- Low Carb

Step-by-Step

  • 1Heat oven to 350 F. Melt the butter and mix the ingredients for the crust up in the pan and press into place with your fingertips.
  • 2Bake for about 10 minutes until the crust is beginning to brown. After 8 minutes, check every minute or so, because once it starts to brown it goes quickly. Allow to cool completely.
  • 3Slice strawberries thin and spread in bottom of cooled crust.
  • 4In a mixing bowl, combine pudding mix and milk until thickened. Fold in cool whip until well blended. Spread over strawberries in pie plate. Chill until ready to serve.
