I love coconut pie. This is one of the best and easiest to make.

Ingredients

  • 1 1/2 cups sugar
  • 2 large eggs
  • pinch salt
  • 1/2 cup butter, melted
  • 2 tablespoons flour, self-rising or all-purpose
  • 1/2 cup evaporated milk
  • 1 1/2 cups angel flake coconut
  • 1 teaspoon vanilla extract
  • 1 large unbaked pie shell or 2 small

How To Make coconut macaroon pie

  • Step 1
    Beat eggs, sugar and salt until mixture is lemon colored.
  • Step 2
    Add butter and flour.
  • Step 3
    Add milk, vanilla and coconut.
  • Step 4
    Pour into pie shell(s) and bake at 325 degrees for about 40 minutes.
