Ingredients

  • 1 1/2 c
    sugar
  • 2 large
    eggs
  • pinch
    salt
  • 1/2 c
    butter, melted
  • 2 Tbsp
    flour, self-rising or all-purpose
  • 1/2 c
    evaporated milk
  • 1 1/2 c
    angel flake coconut
  • 1 tsp
    vanilla extract
  • 1 large
    unbaked pie shell or 2 small

How to Make Coconut Macaroon Pie

Step-by-Step

  1. Beat eggs, sugar and salt until mixture is lemon colored.
  2. Add butter and flour.
  3. Add milk, vanilla and coconut.
  4. Pour into pie shell(s) and bake at 325 degrees for about 40 minutes.
