This butterscotch pie will leave you wanting another slice! For those butterscotch lovers, you will make this again-and-again-and-again. Karen's pie is so easy to do, and who would ever think that something this easy to make would be so good? I got this recipe from Karen Williams in Piney Flats, TN.

Ingredients
- 1 baked pie crust
- 1 cup brown sugar, firmly packed
- 3 tablespoons flour
- 1 1/2 tablespoons cornstarch
- 1/2 teaspoon salt
- 1 1/2 cups scalded milk (i heat this before adding to all the other ingredients)
- 3 eggs (seperated---save the whites for meringue)
- 3 tablespoons butter
- 3/4 teaspoon vanilla
How To Make butterscotch pie

Step 1IN THE MICROWAVE: WHISK EVERY 2 MINUTES FOR 6 MINUTEs, the sugar, flour, cornstarch, salt, and scalded milk.

Step 2Whisk the egg yolks, add a few spoonfuls of the hot sugar mix to temper before adding to the pudding mix....you don't want scrambled eggs!

Step 3Add in butter and vanilla and whisk. Pour into baked pie shell.

Step 4Meringue: Beat egg whites on high with a few spoonfuls of sugar (until stiff peaks form). Top pie and place under the broiler until golden brown....watch it closely! It doesn't take long and will burn if not watched. Cool completely.
