Ingredients

  • 1 baked pie crust
  • 1 cup brown sugar, firmly packed
  • 3 tablespoons flour
  • 1 1/2 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 1 1/2 cups scalded milk (i heat this before adding to all the other ingredients)
  • 3 eggs (seperated---save the whites for meringue)
  • 3 tablespoons butter
  • 3/4 teaspoon vanilla

How To Make butterscotch pie

  • Step 1
IN THE MICROWAVE: WHISK EVERY 2 MINUTES FOR 6 MINUTEs, the sugar, flour, cornstarch, salt, and scalded milk.
  • Step 2
Whisk the egg yolks, add a few spoonfuls of the hot sugar mix to temper before adding to the pudding mix....you don't want scrambled eggs!
  • Step 3
Add in butter and vanilla and whisk. Pour into baked pie shell.
  • Step 4
Meringue: Beat egg whites on high with a few spoonfuls of sugar (until stiff peaks form). Top pie and place under the broiler until golden brown....watch it closely! It doesn't take long and will burn if not watched. Cool completely.
