briana's favorite pecan pie

I have quite a few recipes for Pecan pie, but of all the ones I make this one is my daughters favorite, so I named it in her honor to distinguish one recipe from the others. I hope you like it too. The recipe for this one is in my cookbook. It is great with freshly whipped topping, cool whip or as pecan Pie A La Mode. I think it gets it's distinct flavor from the added Rum or Bourbon.

Ingredients

  • 2 large eggs, room temperature
  • 1 cup corn syrup, light or dark or mixed equally
  • 2/3 cup granulated sugar
  • 1/3 cup butter, melted
  • 2 tablespoons rum or bourbon
  • 1 teaspoon vanilla extract
  • 1 tablespoon flour, wondra or all purpose
  • 1 1/4 cups pecans or walnuts
  • 1 - 9 inch deep dish pie shell

How To Make briana's favorite pecan pie

  • Step 1
    Preheat oven to 350 degrees F. Pour nuts into pie shell and set aside till needed.
  • Step 2
    In a large mixing bowl, beat eggs lightly. Stir in corn syrup, butter, vanilla, & bourbon or rum. Mix flour with sugar, and then add to egg mixture. Mix well. Pour filling into crust. Nuts will rise to the top.
  • Step 3
    Cover edge of pie crust with foil., and bake in preheated 350 degree F. oven for 25 minutes. Then remove foil and continue to bake for an additional 35 to 40 minutes, until filling is set, or when knife is inserted into center of pie it comes out clean. Cool then cover & chill. Top with whipped topping if desired..
