Every year I participate in the Walk for Charity. I couldn't pinpoint that special "taste" in these bars that made it super special. I confronted Chef Jamison, he grinned an amicable grin and said that they were the best because they are created by God. Everything in them is natural and healthy with no preservatives. These are special treats reserved only for his family and once a year for the Walk. The "Secret ingredient" I couldn't figure out was the minced crystalized ginger. Easy to package up for backpacking, camping and healthy treats for kids. Please give them a try.

Ingredients

  • 1 tablespoon coconut oil + enough to oil your hands
  • 1 1/2 cups crispy rice cereal, gluten free
  • 1/2 cup oat bran
  • 1 cup walnuts, lightly chopped and toasted in a pan only until it releases it's smell
  • 1 1/4 cups oatmeal (regular...not instant)
  • 1/2 cup dried cranberries or a mix of blueberry/cranberry
  • 2 tablespoons ginger, crystallized and minced
  • 1 cup brown rice syrup
  • 1/4 cup natural cane sugar
  • 1 teaspoon vanilla
  • 1 teaspoon sea salt

How To Make the best ever grain-ola bars

  • Step 1
    Lightly grease a baking tray with coconut oil.
  • Step 2
    Toast the walnuts in a dry skillet for about 3-4 minutes. Toss all dry ingredients, nuts and fruit together in a large bowl.
  • Step 3
    Boil the brown rice syrup, sugar, vanilla, and salt over medium heat for 4 minutes (stirring constantly).
  • Step 4
    Quickly add syrup to dry ingredients and mix together. It is very sticky. Pour onto the cookie sheet and press using lightly-oiled hands. Keep in mind you don't want them too thick or too thin 1/2" thickness is just about right. When cool, cut into bars and wrap in individual plastic wrap servings.
