Ingredients

  • 2 c
    turbinado sugar
  • 1 c
    vegetable oil
  • 3
    eggs
  • 1 tsp
    vanilla extract
  • 2 c
    shredded zucchini
  • 3 c
    all purpose flour
  • 1 Tbsp
    cinnamon
  • 1 tsp
    salt
  • 1 tsp
    baking soda
  • 1 tsp
    nutmeg
  • 1/2 tsp
    ground cloves
  • 1/4 tsp
    baking powder
  • 1 c
    walnuts, chopped
  • 1 c
    raisins

How to Make SPICY ZUCCHINI BREAD

Step-by-Step

  1. Preheat oven to 350 degrees. Grease 2 9x5 loaf pans.
  2. Beat sugar, oil, eggs and vanilla extract together in a bowl until smooth, fold in zucchini.
  3. In another bowl, stir flour, cinnamon, salt, baking powder, nutmeg, baking powder and cloves together.
  4. Gradually fold flour mixture into the sugar mixture until batter is mixed. Fold in walnuts and raisins - mix well.
  5. Pour mixture into the prepared loaf pans. Bake until toothpick inserted in center comes out clean - about 55 minutes.
