Ingredients

  • 2 cups turbinado sugar
  • 1 cup vegetable oil
  • 3 - eggs
  • 1 teaspoon vanilla extract
  • 2 cups shredded zucchini
  • 3 cups all purpose flour
  • 1 tablespoon cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon nutmeg
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon baking powder
  • 1 cup walnuts, chopped
  • 1 cup raisins

How To Make spicy zucchini bread

  • Step 1
    Preheat oven to 350 degrees. Grease 2 9x5 loaf pans.
  • Step 2
    Beat sugar, oil, eggs and vanilla extract together in a bowl until smooth, fold in zucchini.
  • Step 3
    In another bowl, stir flour, cinnamon, salt, baking powder, nutmeg, baking powder and cloves together.
  • Step 4
    Gradually fold flour mixture into the sugar mixture until batter is mixed. Fold in walnuts and raisins - mix well.
  • Step 5
    Pour mixture into the prepared loaf pans. Bake until toothpick inserted in center comes out clean - about 55 minutes.
