School Lunch Peanut Butter Bars

This is the only recipe I have from my days teaching school at Saint Helen's and the Lunch Ladies.

Ingredients

  • 2 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1/4 tsp
    salt
  • 1 c
    real butter
  • 1 c
    nutty peanut butter
  • 1 large
    banana, mashed, may be added to the batter with the peanut butter, optional
  • 2 large
    eggs
  • 1/2 c
    granulated sugar
  • 1/2 c
    dark brown sugar, firmly packed
  • 1 tsp
    vanilla extract
  • 2 c
    old fashioned oatmeal or corn flakes or some of both
  • 1 1/2 c
    chocolate chips, mini, sprinkle and spread on hot bars then let cool, optional

How to Make School Lunch Peanut Butter Bars

Step-by-Step

  1. Heat oven to 350^. Grease or spray a 9x13-inch baking pan; set aside.
    ---
    Combine flour, baking soda and salt, set aside.
  2. Cream together in a large bowl the butter, peanut butter (and banana,if using) until smooth and blended add sugars and vanilla; beat in eggs.
    Add flour mixture and blend. Stir in oatmeal,stirring to blend well.
  3. Spread batter into prepared pan Bake for 15 to 18 minutes. ]Let cool in pan on wire rack;then cut into squares.

    If desired you can frost or sprinkle with powdered sugar;or sprinkle with the chocolate chips let melt then spread on evenly while hot.
