quinoa/chia fruit salad
Another healthy take off on a simple Appalachian classic fruit salad, made with quinoa and chia. Refreshing, cool, fruity and a great way to end a meal, or have as a lite lunch. Not blan and tasteless and boring by any means. Enjoy!!

Ingredients
- 1/2 cup quinoa uncooked
- 1 tablespoon chia seeds
- 3 tablespoons olive oil
- 3 tablespoons honey (i use sugar free imitation)
- 3 tablespoons lime juice (fresh or bottled)
- 1 large orange, juiced
- 1 large apple (peeled and diced)
- 1/3 cup each dried cherries, dried cranberries
- 2/3 cup toasted pecans
- Dash - ground ginger
How To Make quinoa/chia fruit salad

Step 1Bring 1/2 c dried quinoa and 1Tbs of chia seeds in one cup of water to a boil, reduce to low, cover and cook 15min, rinse and let cool

Step 2Toast pecans in a 400 degree oven for 4 min remove and ruff chop, chop cherries and cranberries, peel and chop Apple (I like a crisp sweet apple)

Step 3Mix together honey, olive oil, ginger and lime juice, pour over quinoa mixture

Step 4Add pecans, apple, cherries and cranberries. Mix together. Mix in orange juice a dash of ground ginger and chill, enjoy!!!!!
