lemon chia seed low carb walnut muffins

I wanted to create a satisfying low carb dessert and this is what I came up with. The chia seeds helps to lower the net carbs and adds fiber to the muffins. The pure Lemon extract sure does pack a lot of flavor in these little muffins, and the walnuts on top adds lots of texture. These muffins are perfect with a cup of coffee, and under 200 calories per muffins, makes them a healthy breakfast or snack choice, & they are moist and tasty as well. In lieu of some of the fat, I did use some applesauce. A real tasty and satisfying treat.

Ingredients

  • 2 cups super fine almond flour
  • 1/3 cup chia seeds
  • 2 large eggs, room temperature
  • 1 cup splenda zero calorie sweetener
  • 8 ounces no sugar added applesauce
  • 2 teaspoons pure lemon extract
  • 1 teaspoon baking soda
  • - dash of salt
  • 1/2 cup buttermilk or sour milk
  • 1/2 cup black walnuts

How To Make lemon chia seed low carb walnut muffins

  • Step 1
    Preheat oven to 325 degrees F. Line muffin tins with paper liners. Spray with non stick cooking spray if desired. Set aside till needed.
  • Step 2
    Add the almond flour, chia seeds, salt and baking powder along with 1/2 of the nuts, to a medium bowl.
  • Step 3
    Stir and blend together.
  • Step 4
    In a separate bowl add in the eggs, splenda oil and applesauce with milk, & lemon extract beat together till blended well.
  • Step 5
    Now add in half the dry ingredients, then beat, till blended, then add in the remaining dry ingredients, and beat till batter is well blended.

    Pour batter into prepared muffin cups, then top with the remaining nuts, then bake in preheated oven for 25 minutes or until toothpick inserted into center comes out clean.
