We love ice cream and had an opportunity to taste this delicious treat recently. I begged for the recipe... and I will share the basic version with all of you... a truly exotic treat.

  • ·
    5 prickly pears - peeled & pureed
  • ·
    2.5 oz evaporated milk
  • ·
    10 oz heavy cream
  • ·
    1 tbsp white sugar
  • ·
    3/4 tbsp pure vanilla extract/seeds/or paste

How to Make Ice Cream - Prickly Pear


  1. First we make a syrup:

    In a small pot, over medium heat, add the pear puree and the vanilla together, bring to a boil and then simmer for 15 - 20 minutes.

    Remove from heat; when completely cooled, place in the refrigerator for about 2 hours to chill.
  2. In a large bowl add the milk and cream, mix and pour into a container with a lid and freeze for 1 hour.
  3. Now carefully stir the pear syrup into the frozen cream mixture, blending well.

    Place back in the freezer until ready to serve. It usually tastes better the next day.
