We love ice cream and had an opportunity to taste this delicious treat recently. I begged for the recipe... and I will share the basic version with all of you... a truly exotic treat.

method No-Cook or Other
yield 2 (Please note chilling time is not noted... but is best after 24 hours)

Ingredients

  • - 5 prickly pears - peeled & pureed
  • - 2.5 oz evaporated milk
  • - 10 oz heavy cream
  • - 1 tbsp white sugar
  • - 3/4 tbsp pure vanilla extract/seeds/or paste

How To Make ice cream - prickly pear

  • Step 1
First we make a syrup: In a small pot, over medium heat, add the pear puree and the vanilla together, bring to a boil and then simmer for 15 - 20 minutes. Remove from heat; when completely cooled, place in the refrigerator for about 2 hours to chill.
  • Step 2
In a large bowl add the milk and cream, mix and pour into a container with a lid and freeze for 1 hour.
  • Step 3
Now carefully stir the pear syrup into the frozen cream mixture, blending well. Place back in the freezer until ready to serve. It usually tastes better the next day.
