It's just about time for home made ice cream. I have many that I like to make I'm thinking of writing a cookbook just for ice cream and ice cream toppings.

1 cup milk, 2%
14 ounces cream of coconut
1/2 cup heavy cream
1 1/2 cups sweetened flaked coconut ( optional )

How To Make coconut ice cream

Step 1

Combine the milk and cream of coconut in the container of a food processor or blender, and mix thoroughly. Stir in cream and flaked coconut.

Step 2

Pour into the container of an ice cream maker, and freeze according to the manufacturers instructions.
Step 3

NOTE: Do not confuse sweetened cream of coconut- used in this recipe with unsweetened coconut milk or cream. The sweetness in this recipe comes from the cream of coconut.
