Yum. I created a similar recipe to use specifically with frozen peaches, but decided to try it with strawberries this time. Our strawberry patch produces extremely well, so the freezer is overstocked with them. The fruit layer of this cobbler is moist and juicy, but not sloppy, and the topping has a sweet crunch. It's easy to make, and so delicious!

    frozen strawberries, thawed
  • 3/4 c
    sugar, divided
  • 1 box
    jiffy golden yellow cake mix (9 oz.)
  • 1/4 c
    salted butter, melted

    Thaw strawberries in refrigerator overnight.

    Gather ingredients. Preheat oven to 350 degrees F.

    Lightly grease inside of a 8"x8" casserole dish with butter.
  • Strawberries and sugar in saucepan.

    Add thawed strawberries and 1/2 cup of sugar to a large saucepan; gently stir to combine. Over medium heat, bring to a low boil; gently stir and let simmer for 2 to 3 minutes.
  • Strawberries removed to baking dish with perforated spoon.

    Remove from heat. Use a large slotted spoon to lift the strawberries from the juice and place strawberries in prepared baking dish. Reserve juice.

    Measure out 1/3 cup of reserved strawberry juice; pour over strawberries. (May use up to 1/2 cup of juice if desired.)
  • Sprinkling jiffy mix over berries in dish.

    Sprinkle Jiffy yellow cake mix over all.
  • Sprinkling sugar over jiffy mix.

    Evenly sprinkle 1/4 cup sugar over the cake mix.

    *Important step: Use a butter knife to gently make swirls in baking dish to combine some of the dry ingredients with the berry juices below.
  • Pouring melted butter over mixture in dish.

    Drizzle with 1/4 cup melted butter.
  • Baked cobbler in 8

    Bake at 350 degrees F for 35-40 minutes, or until the top is golden brown and set.
  • Plated strawberry jiffy cobbler topped with whipped cream.

    Let cool for 30 minutes before serving. Very good hot, warm or cold. Serve with a dollop of whipped cream or scoop of vanilla ice cream if desired.
  • Baked cobbler.

    Refrigerate leftovers, uncovered.
