stawberry cheesecake parfaits sugar free

This is a sugar-free dessert I came up with. This cheesecake dessert omits the need for a crust. This desert is very decadent, satisfying and delicious. To top it off, it is easy, sugar-free, and about 13- 20 carbs per serving depending on what size dessert dishes you use. Enjoy!

Ingredients

  • STAWBERRY SAUCE
  • 16 ounces frozen strawberries thawed
  • 3 tablespoons splenda or other sweetener
  • 3 teaspoons unflavored gelatin
  • 2 tablespoons cold water
  • FAUX CHEESECAKE
  • 1 package 8 ounce 1/3 less fat cream cheese
  • 1 teaspoon vanilla
  • 3 1/2 tablespoons splenda or other sweetener
  • 1 package sugar free instant cheesecake, or white chocolate pudding
  • 1 1/2 cups whole milk
  • 1 cup heavy whipping cream

How To Make stawberry cheesecake parfaits sugar free

  • Step 1
    Place strawberries juice and all in a sauce pan.
  • Step 2
    Add in the splenda. Cook over medium high heat until strawberries soften and reduce to half thier size. About 5-10 minutes.
  • Water mixed with gelatin powder
    Step 3
    In a small bowl empty the gelatin powder with 2 tablespoons of cold water. Mix well. Set aside for a couple of minutes.
  • Step 4
    Add gelatin mixture to hot strawberry mixture. Mix well. Pour into a bowl. Cool in icewater bath. Then you may refrigerate.
  • Step 5
    Place 1 1/2 cups of milk and pudding in a bowl. Whisk until thickened. Set aside.
  • Step 6
    Beat softened cream cheese, vanilla and Splenda together until well Incorporated, and whipped. Set aside.
  • Step 7
    Beat chilled whipping cream until soft peaks form.
  • Step 8
    Add the cream cheese mixture to the whipping cream. Continue to beat until stiff peaks form.
  • Step 9
    Fold half of the whipping cream mixture into the pudding. Refrigerate pudding and remaining whipped cream until ready to assemble dessert, or proceed to layer dessert.
  • Step 10
    In individual dessert dishes. Place a spoonful of strawberry mixture on bottom of dish. Top with 1/4 of the pudding mixture. Place another layer of strawberries on top. Top it off with a dollop of the remaining whipped cream. Refrigerate until Ready to serve. Enjoy! NOTE: These are pretty good size portions. To make smaller portions. Divide mixtures evenly among six dessert dishes. That will lower carbs to about 13 carbs per serving.
