I have a feeling we'll be cooking our way through Malta for a contest on another site! I found this recipe on a Maltese site and changed it a bit to be easier for American bakers to deal with.

Ingredients

  • 4 - pears
  • 1/2 cup sweet dessert wine
  • 1 cup ground almonds
  • 2 tablespoons superfine sugar
  • 2 tablespoons unsalted butter
  • 1 tablespoon amaretto (or !/4 tsp almond extract)
  • 1 teaspoon grated lemon rind
  • - ice-cream or whipped cream for serving

How To Make pears baked with wine and almonds

  • Step 1
    Preheat the oven to 350ºF. Peel, cut in half and core the pears then arrange in a baking dish. Pour the wine over, cover tightly with foil and bake for 1–1½ hours or until tender.
  • Step 2
    Place the ground almonds, sugar, butter, amaretto (or extract) and lemon rind in a bowl and mix until combined.
  • Step 3
    Take the baking dish out of the oven, uncover pears and divide the mixture between them
  • Step 4
    Return to the oven and bake, uncovered, for 15–20 minutes or until the almond mixture has browned. Serve with whipped cream or ice-cream.
