Pears Baked with Wine and Almonds
1/2 csweet dessert wine
1 cground almonds
2 Tbspsuperfine sugar
2 Tbspunsalted butter
1 Tbspamaretto (or !/4 tsp almond extract)
1 tspgrated lemon rind
·ice-cream or whipped cream for serving
How to Make Pears Baked with Wine and Almonds
- Preheat the oven to 350ºF.
Peel, cut in half and core the pears then arrange in a baking dish. Pour the wine over, cover tightly with foil and bake for 1–1½ hours or until tender.
- Place the ground almonds, sugar, butter, amaretto (or extract) and lemon rind in a bowl and mix until combined.
- Take the baking dish out of the oven, uncover pears and divide the mixture between them
- Return to the oven and bake, uncovered, for 15–20 minutes or until the almond mixture has browned.
Serve with whipped cream or ice-cream.
