million dollar rice salad
This was first called "Million Dollar Rice Salad" and won first prize in a Texas Farm Bureau contest- where all the recipes had to contain rice and this was the prize winner and the only dessert salad entered. Since then it has been on dinner tables and buffet counters at most every holiday and celebration and goes by many names and many different ingredients. But this is my favorite combination.

Ingredients
- 8 ounces cream cheese, softened
- 1 1/2 tablespoons granulated sugar
- 1 tablespoon mayonnaise
- 2 cups cooked rice, cooled
- 12 large maraschino cherries, cut in half
- 20 ounces can pineapple tidbits, drained
- 10 ounces pkg. mini marshmallows, white or pastels
- 8 ounces tub thawed cool whip
- 1 cup chopped pecans, optional
How To Make million dollar rice salad

Step 1Combine cream cheese, sugar and mayonnaise and whip until smooth. Fold in rice, cherries, pineapple and marshmallows and blend gently. Fold in Cool Whip and pecan if desired.

Step 2Note: Original recipe calls for whipped Dream Whip according to package directions. I prefer to us the Cool Whip.
