I've made this recipe several times and it's simply delicious. Very cool in summer. This recipe came from the Food Network's The Barefoot Contessa.

Ingredients

  • 2 - apricots, pitted and sliced
  • 2 - plums, pitted and sliced
  • 1 - kiwi fruit, skinned and sliced
  • 1 cup cherries, pitted
  • 1 cup mascarpone cheese
  • 2 tablespoons honey
  • 1/2 teaspoon vanilla extract
  • 1 - vanilla bean, with seeds scraped off
  • 2 tablespoons heavy cream, cold

How To Make fresh fruit w/mascarpone

  • Step 1
    Combine all the fruit in a large bowl and chill.
  • Step 2
    In a separate bowl, combine all the other ingredients.
  • Step 3
    Add the heavy cream and stir.
  • Step 4
    Pour over the fruit and serve. Top with Cool Whip or real whipped cream and maraschino cherries or strawberries if desired.
