easy berry-banana bread with or w/out frosting

I always have either fresh or frozen fruit on hand & I also had very ripe bananas so I'd decided to make a bread but add baking cocoa powder since hubby loves anything chocolate. The sour cream added a nicer moistness but you can also use unsweetened applesauce. The best part? Well eating it of course, but clean up is so much easier w/ a blender, just add hot soapy water, blend, tada, clean.

  • 2 lg
    ripe bananas, sliced
  • 1/2 c
    vegetable oil
  • 1 c
    sugar
  • 2 lg
    room temp eggs
  • 2 tsp
    pure vanilla extract
  • 1-1/2 c
    flour, plus 1 tbsp flour
  • 1/2 c
    light sour cream
  • 1 tsp
    baking soda
  • 1 pinch
    salt
  • 1/4 tsp
    ground cinnamon
  • 1/4 c
    good quality baking cocoa powder
  • 1 c
    washed, hulled, diced fresh strawberries
  • 1/3 c
    dark chocolate chips
  • 1 can
    whipped cream cheese frosting, if using, or whipped cream

How To Make easy berry-banana bread with or w/out frosting

  • An easier way w/ less mess to prep for the berry-banana bread.

    Preheat oven to 350. Lightly spray a 9" x 5" loaf pan w/ cooking spray. Cut some parchment paper to fit pan, plus enough to hang over the sides of pan. Lightly spray the paper & mold the paper to pan. In a blender, place 1/2 cup diced berries & sliced bananas, oil, sugar, eggs & vanilla.
  • Mixing the diced strawberries w/ flour.

    Place on blend until smooth. Unplug blender & using a spatula, scrape the sides. Plug blender in & blend another 1-2 minutes. In small bowl, mix 1 tbsp flour w/ remaining berries, gently mix. Set aside.
  • Mixed & ready to bake.

    In a medium bowl, add a sifter to the bowl. Place the remaining flour, baking soda, salt, baking cocoa powder & cinnamon into sifter. Sift until all ingredients are now in the bowl. Pour blended contents into pan w/ parchment paper. Spoon dry, sifted ingredients gently into batter in pan. Gently mix floured, diced berries & dark chocolate chips into batter. Bake about 1 hr, depending on your oven. Check w/ a toothpick at 45 mins. If toothpick comes out clean but not dry looking, it's done. If not, continue baking. Tent lightly w/ foil if browning too quick. Take out of oven, let cool completely. Using the parchment paper to lift out the bread, set it on a serving platter. Pelll off all paper carefully. Then serve w/ a dollop of whipped cream or slightly melted whipped cream cheese frosting. You can always add a clean & sliced strawberry on top of the cream.
