david's cream filled crepes
This recipe is so simple it was even a hit at a tailgating party and easy to make on the grill. David simply warmed the fillings right in the cans in a pot of water while grilling sausages and creating one crepe after another in a small skiller

Ingredients
- CREPES
- 2 large eggs
- 1 cup milk
- 1 cup dry pancake mix
- 3 tablespoons butter, melted
- - butter for the skillet
- FILLING
- 1 package soft cream cheese (8 0z.)
- 2 tablespoons sugar
- 1 teaspoon vanilla
- TOPPING
- 1 can fruit pie filling (shown here with blueberry and cherry)

Step 1Combine all crepe ingredients except butter for the skillet and blend till smooth

Step 2Batter should be the consistency of half and half

Step 3Refrigerate batter for at least one hour

Step 4Combine filling ingredients and warm pie fillings

Step 5To prepare crepes melt butter in a small non stick skillet and pour in batter. Cook over medium heat and carefully flip with a thin spatula

Step 6Place cooked crepe on a plate, fill with cream cheese filling, top with warmed pie filling and sprinkle with powdered sugar
