When I lived in Grand Junction Colo. We lived in the center of an apple orchard . One of the things I liked best about it was the apples were right off the trees. This made the best apple dumplings.

Ingredients
- 8 - large green apples peeled and cored
- 1 1/4 cups brown sugar
- 1/3 cup butter
- 1/2 teaspoon salt
- 1 1/2 teaspoons cinnamon
- 1 teaspoon grated lemon rind
- - pie pastry for 2 pies
How To Make apple dumplings

Step 1Peel and core apples. Mix brown sugar, butter, salt, cinnamon lemon rind together and fill each apple cavity with part of mixture.

Step 2Roll out the pastry to 1/8" thickness and cut into squares large enought to cover each apple.

Step 3Place a apple on each square and bring the corners together to hold at the top. Moisten the edges and pinch together to hold the apples in place. Mix 3-4 tablespoons suger and 1 1/2 teaspoons cinnamon together and sprinkle over the tops of each apple.

Step 4Place on a baking sheet and bake at 350 for 30-40 minutes. or until apples are tender. Serve warm with vanilla ice cream.
