When I lived in Grand Junction Colo. We lived in the center of an apple orchard . One of the things I liked best about it was the apples were right off the trees. This made the best apple dumplings.

Ingredients

  • 8 - large green apples peeled and cored
  • 1 1/4 cups brown sugar
  • 1/3 cup butter
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon grated lemon rind
  • - pie pastry for 2 pies

How To Make apple dumplings

  • Step 1
    Peel and core apples. Mix brown sugar, butter, salt, cinnamon lemon rind together and fill each apple cavity with part of mixture.
  • Step 2
    Roll out the pastry to 1/8" thickness and cut into squares large enought to cover each apple.
  • Step 3
    Place a apple on each square and bring the corners together to hold at the top. Moisten the edges and pinch together to hold the apples in place. Mix 3-4 tablespoons suger and 1 1/2 teaspoons cinnamon together and sprinkle over the tops of each apple.
  • Step 4
    Place on a baking sheet and bake at 350 for 30-40 minutes. or until apples are tender. Serve warm with vanilla ice cream.
