sweet potato pudding
This recipe comes from my great Grand mother. She made it at Thanksgiving and Christmas.

Serves 4 to 6
Ingredients
- 2 1/2 cups nondairy creamer
- 6 cups grated raw sweet potatoes
- 3 - eggs
- 1 cup sugar
- 2 teaspoons cinnamon
- 1/2 cup slivered almonds
- 2 tablespoons butter
- 1/2 cup bourbon or rum if desired
How To Make sweet potato pudding

Step 1Preheat oven to 300 degrees.

Step 2Pour nondairy creamer into a bowl, add sweet potatoes.

Step 3In a separate bowl beat together eggs, sugar, cinnamon, and slivered almonds and then mix with sweet potato mixture.

Step 4Pour into a greased 2-quart casserole and dot with butter.

Step 5Bake for 45 minutes. Just before serving, pour bourbon or rum( if desired).

Step 6Top with chopped pecans.
