This recipe comes from my great Grand mother. She made it at Thanksgiving and Christmas.

Ingredients

  • 2 1/2 c
    nondairy creamer
  • 6 c
    grated raw sweet potatoes
  • 3
    eggs
  • 1 c
    sugar
  • 2 tsp
    cinnamon
  • 1/2 c
    slivered almonds
  • 2 Tbsp
    butter
  • 1/2 c
    bourbon or rum if desired

How to Make SWEET POTATO PUDDING

Step-by-Step

  1. Preheat oven to 300 degrees.
  2. Pour nondairy creamer into a bowl, add sweet potatoes.
  3. In a separate bowl beat together eggs, sugar, cinnamon, and slivered almonds and then mix with sweet potato mixture.
  4. Pour into a greased 2-quart casserole and dot with butter.
  5. Bake for 45 minutes. Just before serving, pour bourbon or rum( if desired).
  6. Top with chopped pecans.
