sweet potato pudding

This recipe comes from my great Grand mother. She made it at Thanksgiving and Christmas.

yield Serves 4 to 6

Ingredients

  • 2 1/2 cups nondairy creamer
  • 6 cups grated raw sweet potatoes
  • 3 - eggs
  • 1 cup sugar
  • 2 teaspoons cinnamon
  • 1/2 cup slivered almonds
  • 2 tablespoons butter
  • 1/2 cup bourbon or rum if desired

How To Make sweet potato pudding

  • Step 1
    Preheat oven to 300 degrees.
  • Step 2
    Pour nondairy creamer into a bowl, add sweet potatoes.
  • Step 3
    In a separate bowl beat together eggs, sugar, cinnamon, and slivered almonds and then mix with sweet potato mixture.
  • Step 4
    Pour into a greased 2-quart casserole and dot with butter.
  • Step 5
    Bake for 45 minutes. Just before serving, pour bourbon or rum( if desired).
  • Step 6
    Top with chopped pecans.
