sugar free whole grain bagel bread pudding
This recipe came about because of some whole grain Mini Bagels that were given to me, & I hadn't used them. Having a sweet tooth but not wanting to go over board,SINCE I AM WATCHING WHAT I EAT, I decided to make a healthier type bread pudding using a Splenda type sweetner called NATURA TASTE GOLD with zero calories. I used whole grain mini bagels, plumped raisins, and a few spices, and it tasted great, and had 4 grams of fiber per serving. You may like it too. My husband had 2 larger than average servings, which he can afford since he is not trying to loose weight.

Ingredients
- 8 - mini bagels cubed or torn into small pieces
- 3/4 cup raisins (covered & microwaved for 5 minutes)
- 2 large eggs
- 2 cups 1% milk
- 2 tablespoons butter
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 teaspoons vanilla extract
- 1 box sugar free vanilla pudding
- 1 cup splenda or other zero calorie sweetner
How To Make sugar free whole grain bagel bread pudding

Step 1Preheat oven to 350 degrees F. Spray a 2 quart casserole dish or 9X9 inch pan with non stick cooking spray and set aside till needed. Cut or tear the bagels into cubes or small pieces in a large bowl. Add the cinnamon & nutmeg. I used Pepperidge Farms Mini Bagels.

Step 2In a 4 cup measure or medium bowl add milk eggs zero calorie sweetner, pudding & extract or vanilla bean paste, then beat till blended. This is the zero calorie sweetner that I used.

Step 3Add raisins to a small bowl, cover with water then wrap bowl with saran wrap & microwave for 5 minutes. Set aside and allow to cool, then drain. Add the milk & egg mixture to the cubed or torn bagel, and stir till mixed together. Allow to sit about 5 minutes.

Step 4Pour bread mixture into prepared casserole dish. Bake in preheated 350 degrees F. oven for 50 to 55 minutes or till set.

Step 5Serve with fat free whipped topping or plain or as desired. Enjoy.
