How to Make For the Love of Lemon Pudding (THM Friendly)
- Melt your butter and mix egg yolks into it and set aside. I usually microwave my butter for about 30 seconds and then mix the yolks in. You don't want the butter to be super hot.
- In a medium size pan, bring water, Sweet Blend, salt, lemon juice and lemon zest to a boil. Turn off the heat and while stirring quickly, add egg/butter mixture. Once that has been well incorporated, continue to stir vigorously while adding the glucomannan. Continue stirring for approximately 1 minute.
