1 pinch
salt
1/3 c

1 tsp
caster sugar (superfine sugar)

egg yolk

FOR THE FILLING:

1/4 c
caster sugar
1/4 c
butter
1
egg
3 Tbsp
chopped mixed candied peel
2/3 c
sultanas (golden raisins)

How to Make QUEEN MARY TARTLETS

Step-by-Step

  • 1Combine the flour and salt in a bowl and rub in the butter until the mixture resembles fine breadcrumbs. Stir in the sugar.
  • 2Mix the egg yolk with 2 Tbsp. cold water and add to the mixture, then knead to a dough. Roll out thinly on a lightly floured board, cut into 12 rounds with a cookie cutter and place in a muffin tin.
  • 3For the filling: cream together the sugar and butter; then beat in the egg. Add the mixed peel and sultanas. Divide the mixture between the tart shells.
  • 4Bake in a preheated 375-degree oven for 30-35 minutes or until golden and set.
