Ingredients
- 1 cup all purpose flour
- 1 pinch salt
- 1/3 cup butter
- 1 teaspoon caster sugar (superfine sugar)
- 1 - egg yolk
- FOR THE FILLING:
- 1/4 cup caster sugar
- 1/4 cup butter
- 1 - egg
- 3 tablespoons chopped mixed candied peel
- 2/3 cup sultanas (golden raisins)
How To Make queen mary tartlets

Step 1Combine the flour and salt in a bowl and rub in the butter until the mixture resembles fine breadcrumbs. Stir in the sugar.

Step 2Mix the egg yolk with 2 Tbsp. cold water and add to the mixture, then knead to a dough. Roll out thinly on a lightly floured board, cut into 12 rounds with a cookie cutter and place in a muffin tin.

Step 3For the filling: cream together the sugar and butter; then beat in the egg. Add the mixed peel and sultanas. Divide the mixture between the tart shells.

Step 4Bake in a preheated 375-degree oven for 30-35 minutes or until golden and set.
