ellen's signature apple pie

I don't know why pie dough intimidates me, but it always has. I had a frozen single pie crust on hand and some apples but I did not want to deal with making a second crust. So I took a little of this and a little of that and came up with my new concoction. It is absolutely to die for and the best part--it isn't overly sweet!

Ingredients

  • 1 - single crust pie shell
  • 5 or 6 large apples, peeled and sliced thin
  • 1/3 cup sugar
  • 2 tablespoons flour
  • 1 teaspoon cinnamon
  • 1 dash nutmeg
  • 1 dash salt
  • TOPPING:
  • 1/4 cup cold butter
  • 1/4 cup brown sugar, firmly packed
  • 3/4 cup all purpose flour

How To Make ellen's signature apple pie

  • Step 1
    As you slice the apples, place them in a large bowl with a half to one teaspoon lemon juice to prevent them from turning brown. Stir them around to coat.
  • Step 2
    Add the sugar, flour, cinnamon, nutmeg, and salt to the apples and mix thoroughly.
  • Step 3
    Place apples in prepared pie shell.
  • Step 4
    FOR THE TOPPING: In a medium bowl, combine cold butter, brown sugar, and flour with a pastry blender until mixture resembles fine- to medium-sized crumbs. Sprinkle the crumbs over the top of the apples.
  • Step 5
    Place the pie on a cookie sheet to catch any drips, and bake in a preheated 400-degree oven for one hour. Serve warm with a scoop of vanilla ice cream.
