ellen's signature apple pie
I don't know why pie dough intimidates me, but it always has. I had a frozen single pie crust on hand and some apples but I did not want to deal with making a second crust. So I took a little of this and a little of that and came up with my new concoction. It is absolutely to die for and the best part--it isn't overly sweet!

Ingredients
- 1 - single crust pie shell
- 5 or 6 large apples, peeled and sliced thin
- 1/3 cup sugar
- 2 tablespoons flour
- 1 teaspoon cinnamon
- 1 dash nutmeg
- 1 dash salt
- TOPPING:
- 1/4 cup cold butter
- 1/4 cup brown sugar, firmly packed
- 3/4 cup all purpose flour
How To Make ellen's signature apple pie

Step 1As you slice the apples, place them in a large bowl with a half to one teaspoon lemon juice to prevent them from turning brown. Stir them around to coat.

Step 2Add the sugar, flour, cinnamon, nutmeg, and salt to the apples and mix thoroughly.

Step 3Place apples in prepared pie shell.

Step 4FOR THE TOPPING: In a medium bowl, combine cold butter, brown sugar, and flour with a pastry blender until mixture resembles fine- to medium-sized crumbs. Sprinkle the crumbs over the top of the apples.

Step 5Place the pie on a cookie sheet to catch any drips, and bake in a preheated 400-degree oven for one hour. Serve warm with a scoop of vanilla ice cream.
