How to Make Cross Creek Old Country Woman's Butterscotch Pie
- 1Put on sugar/water and butter to boil in pot.Beat egg yolk until light and add in 4 TBSP half and half that has been well whisked with the 2 TBSP flour.
- 2Stir into the syrup that has been boiling for 3 minutes.Lower the heat and cook until thick.
- 3Beat 2 egg whites until stiff and stir into thick mixture.Cool slightly and turn into a prebaked pie crust.Can put meringue on top=3 egg whites--1/2 tsp cream of tartar and 1 TBSP sugar whipped with a mixer until stiff peaks form,then put on pie and broil for a very few minutes until golden brown.
