oatmeal raisin morning muffin #gluten free

Taste just like my morning oatmeal! This muffin is a very moist one... I have been told that adding 1/4 cup of brown sugar will amp up the sweetness. I don't use sugar but those of you that do give it a try let me know how it turns out!

Ingredients

  • 2 - eggs beaten
  • 2 teaspoons vanilla extract
  • 2 cups applesauce, unsweetened
  • 1 - mashed banana
  • 1/2 cup honey
  • 1/2 cup brown sugar
  • 1/4 cup flax seed meal
  • 1 tablespoon cinnamon
  • 3 teaspoons baking soda
  • 2 cups milk
  • 1/2 cup raisins
  • 5 cups old fashion oatmeal
  • 2 tablespoons chia seeds

How To Make oatmeal raisin morning muffin #gluten free

  • Step 1
    take raisin, place in covered container add tablespoon of water and place in microwave for 1 min. remove and set aside.
  • Step 2
    in a large mixing bowl, mix eggs, vanilla, applesauce,banana, honey, sugar,cinnamon mix it well.
  • Step 3
    add the oatmeal mix it in. now add the Milk.
  • Step 4
    Drain water off of raisins, add baking soda and raisin to the mix.
  • Step 5
    drop by even spoonfuls in to greased muffin pans.
  • Step 6
    Bake for 35 to 40 mins. Until toothpick comes out clean. Enjoy warm or cold. This is a very quick breakfast and much better for you then any fast food.
