oatmeal raisin morning muffin #gluten free
Taste just like my morning oatmeal! This muffin is a very moist one... I have been told that adding 1/4 cup of brown sugar will amp up the sweetness. I don't use sugar but those of you that do give it a try let me know how it turns out!

Ingredients
- 2 - eggs beaten
- 2 teaspoons vanilla extract
- 2 cups applesauce, unsweetened
- 1 - mashed banana
- 1/2 cup honey
- 1/2 cup brown sugar
- 1/4 cup flax seed meal
- 1 tablespoon cinnamon
- 3 teaspoons baking soda
- 2 cups milk
- 1/2 cup raisins
- 5 cups old fashion oatmeal
- 2 tablespoons chia seeds

Step 1take raisin, place in covered container add tablespoon of water and place in microwave for 1 min. remove and set aside.

Step 2in a large mixing bowl, mix eggs, vanilla, applesauce,banana, honey, sugar,cinnamon mix it well.

Step 3add the oatmeal mix it in. now add the Milk.

Step 4Drain water off of raisins, add baking soda and raisin to the mix.

Step 5drop by even spoonfuls in to greased muffin pans.

Step 6Bake for 35 to 40 mins. Until toothpick comes out clean. Enjoy warm or cold. This is a very quick breakfast and much better for you then any fast food.
