Oatmeal Raisin Morning Muffin #Gluten free

Taste just like my morning oatmeal! This muffin is a very moist one... I have been told that adding 1/4 cup of brown sugar will amp up the sweetness. I don't use sugar but those of you that do give it a try let me know how it turns out!

    eggs beaten
  • 2 tsp
    vanilla extract
  • 2 c
    applesauce, unsweetened
  • 1
    mashed banana
  • 1/2 c
  • 1/2 c
    brown sugar
  • 1/4 c
    flax seed meal
  • 1 Tbsp
  • 3 tsp
    baking soda
  • 2 c
  • 1/2 c
  • 5 c
    old fashion oatmeal
  • 2 Tbsp
    chia seeds

How to Make Oatmeal Raisin Morning Muffin #Gluten free


  1. take raisin, place in covered container add tablespoon of water and place in microwave for 1 min. remove and set aside.
  2. in a large mixing bowl, mix eggs, vanilla, applesauce,banana, honey, sugar,cinnamon mix it well.
  3. add the oatmeal mix it in. now add the Milk.
  4. Drain water off of raisins, add baking soda and raisin to the mix.
  5. drop by even spoonfuls in to greased muffin pans.
  6. Bake for 35 to 40 mins. Until toothpick comes out clean.
    Enjoy warm or cold. This is a very quick breakfast and much better for you then any fast food.
