mini peanut butter cups

These have become a Christmas tradition, three years running. Simple to make with the best peanut butter centers.

Ingredients

  • 1 cup creamy peanut butter, divided
  • 4 1/2 teaspoons butter softened
  • 1/2 cup confectioners sugar
  • 1/2 teaspoon salt
  • 12 ounces semi sweet chocolate chips
  • 4, 1.55 ounces chocolate candy bars, coarsely chopped

How To Make mini peanut butter cups

  • Step 1
    In a small bowl, combine 1/2 cup peanut butter, butter, confectioners sugar and salt until smooth; set aside. I use my electric mixer until it's very smooth and creamy. Few minutes
  • Step 2
    In a microwave, melt the chocolate chips, candy bars and remaining peanut butter; stir until smooth.
  • Step 3
    Line mini muffin cups with muffin papers. Drop by teaspoonfuls of chocolate into muffin cups papers. This will fill bottom quarter or so with chocolate.
  • Step 4
    Drop rounded small teaspoon balls of peanut butter into center of each cup. Top with another teaspoon of chocolate, covering peanut butter.
  • Step 5
    Decorate top with sprinkles if desired. Refrigerate until set and store in an air tight container.
