This guilt-free, vegan, no ice cream machine necessary ice cream is my go-to during stressful days. It's healthy and refreshing, and gives me all the flavor of my favorite frozen treat without all the sugar and dairy that makes me sick!

Ingredients
- 3 medium bananas (frozen)
- 3 tablespoons non-dairy milk
- 1 teaspoon mint extract
- 1 1/2 tablespoons unsweetened cocoa
How To Make vegan mint chocolate ice cream

Step 1Chop up the bananas in a food processor or blender (I use a Vitamix).

Step 2Add the mint, non-dairy milk, and cocoa powder. Blend until smooth.

Step 3Enjoy straight from the blender!

Step 4Freeze any leftovers in an air tight Tupperware container. When removed from freezer, let thaw for 3-5 minutes before eating.
