This guilt-free, vegan, no ice cream machine necessary ice cream is my go-to during stressful days. It's healthy and refreshing, and gives me all the flavor of my favorite frozen treat without all the sugar and dairy that makes me sick!

Ingredients

  • 3 medium bananas (frozen)
  • 3 tablespoons non-dairy milk
  • 1 teaspoon mint extract
  • 1 1/2 tablespoons unsweetened cocoa

How To Make vegan mint chocolate ice cream

  • Step 1
    Chop up the bananas in a food processor or blender (I use a Vitamix).
  • Step 2
    Add the mint, non-dairy milk, and cocoa powder. Blend until smooth.
  • Step 3
    Enjoy straight from the blender!
  • Step 4
    Freeze any leftovers in an air tight Tupperware container. When removed from freezer, let thaw for 3-5 minutes before eating.
