~ strawberries & cream ~

With Spring here and strawberries becoming more available, I decided to whip up this delicious dessert to take to my Nieces tomorrow. Such an easy dessert to make, yet impressive enough to serve to quests. I make this a lot in the summer, when strawberries are at their ripest. Quick to prepare and quite refreshing. This is also a wonderful dessert for Easter. Enjoy!

Ingredients

  • THIS RECIPE COULD EASILY BE HALVED IF NOT NEEDING AS MUCH
  • 1 - 8 ounces cream cheese, softened
  • 1/4 - 1/3 cup confectioners' sugar
  • 1 cup heavy cream
  • milk - if needed to think out
  • 1 teaspoon vanilla extract
  • 32 ounces fresh strawberries - sliced or quartered
  • sweetener - if desired for the strawberries, i used 1 package of stevia - optional

How To Make ~ strawberries & cream ~

  • Step 1
    In a bowl, slice or quarter your strawberries. May sweeten a little if too tart. I added some Stevia to mine, entirely up to you. Keep chilled.
  • Step 2
    In a medium bowl, beat cream cheese until smooth. Add sugar and beat until well blended. Taste and adjust sweetness if need be. Beat in vanilla. Add cream and mix just until incorporated. Chill until ready to use. If too thick, thin out some with more cream or milk. You don't want it too thin to where it ends up in the bottom of the dish.
  • Step 3
    Place 3 - 4 spoonfuls of cream over the strawberries I tap the dish on the counter, so it mingles down through the strawberries. If you want to get fancy, add some squirt-able whipped cream and a strawberry on top. Such a quick, easy and pretty dessert. Impressive enough to serve to quests. Keep any leftover cream chilled. Enjoy!
