peppermint sugar cookies

This is my Great,Great Grandmother's Recipe. These melt in your mouth butter and peppermint cookies are to die for ! And could possibly be a really great cookie for a Cookie swap ( if anyone even still does that these days) Merry Christmas and I pray these cookies find there way to your cookie tray this Christmas season.

Ingredients

  • COOKIE MIXTURE
  • 2 1/2 cups white unbleached flour
  • 1 cup powdered sugar
  • 1 cup butter (softened) (2 sticks)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • FROSTING AND DECOR
  • 2 cups powdered sugar
  • 2-3 tablespoons water, cold (judge the smoothness of your frosting)
  • 1 bag crushed peppermint candies (10 oz)
  • - food coloring if disired, i add green to half my frosted cookies!

How To Make peppermint sugar cookies

  • Step 1
    In a mixing bowl, add butter,salt,powdered sugar,egg and vanilla, mix on slow speed till creamed
  • Step 2
    Add flour mix on low speed until dough is stiff. cover and chill for at least 3-4 hours
  • Step 3
    pre-heat oven to 375*. roll out small balls and place on a none greased pan and bake for 10-12 mins.
  • Step 4
    cool on racks and in a small bowl, mix powdered sugar and water until frosting is smooth. in a separate bowl, add 1/2 a bag (at a time) of crushed peppermint
  • Step 5
    lay wax paper or parchment paper down on a flat surface dip your cooled cookies face down into the frosting bowl for 8-10 seconds. then immediately dip into the peppermint bowl, and place on wax/parchment paper and let set up. (about 2-3 hours will be dry)
  • Step 6
    These cookies are best used the same day or freeze up to 6 months months. I hope you find my Great Great Grandmothers peppermint cookies melt in your mouth! Enjoy!
