peanut butter oatmeal cookie baked
I don't know where I found this recipe many, many years ago but my family loves it. I have added mini chocolate chips, cocoa powder and vanilla to it. I don't know the amount as I am an old fashioned cook like my mother and grandmother. I often double and triple this recipe, cook one sheet and store the rest in the refrigerator or freezer to make later when the grandkids come up. Healthier because no flour.

Ingredients
- 1/2 cup peanut butter (chunky or smooth)
- 1/2 cup packed brown sugar
- 1 - egg
- 1 1/4 cups quick cooking oats
- 1/2 teaspoon baking soda
How To Make peanut butter oatmeal cookie baked

Step 1Cream peanut butter and brown sugar until fluffy. Beat in egg and baking soda.

Step 2Drop by tablespoon onto greased baking sheet about 2 inches apart. ( I use parchment paper).

Step 3Bake at 350 degrees for about 6-8 minutes. Yield about 2 dozen cookies
