I don't know where I found this recipe many, many years ago but my family loves it. I have added mini chocolate chips, cocoa powder and vanilla to it. I don't know the amount as I am an old fashioned cook like my mother and grandmother. I often double and triple this recipe, cook one sheet and store the rest in the refrigerator or freezer to make later when the grandkids come up. Healthier because no flour.

  • 1/2 c
    peanut butter (chunky or smooth)
  • 1/2 c
    packed brown sugar
  • 1
    egg
  • 1 1/4 c
    quick cooking oats
  • 1/2 tsp
    baking soda

How to Make Peanut Butter Oatmeal Cookie Baked

Step-by-Step

  1. Cream peanut butter and brown sugar until fluffy. Beat in egg and baking soda.
  2. Drop by tablespoon onto greased baking sheet about 2 inches apart. ( I use parchment paper).
  3. Bake at 350 degrees for about 6-8 minutes. Yield about 2 dozen cookies
