A light and chewy oatmeal cookie with just the right amount of chips so as not to over power them

Ingredients

  • 1 stick butter softened
  • 1 large egg
  • 2/3 cup brown sugar, firmly packed
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup oatmeal (i used rolled oats non instant)
  • 1 1/4 cups flour (more if needed to make a firm batter)
  • 1 teaspoon vanilla extract
  • 1/2 cup assorted chips (i used milk chocolate and peanut butter)

How To Make oatmeal chip cookies

  • Step 1
    Preheat oven to 350 degrees
  • Step 2
    Mix egg, butter, baking powder, vanilla, salt, and sugar together until fluffy. Mix in the oatmeal and flour then fold in the chips.
  • Step 3
    Drop by spoon fulls onto an ungreased cookie sheet and bake for 10-12 minutes until edges start to brown. Do not over bake.
