my grandma's crunchy and chewy cookies

When I was a little girl we spent a few summers at my grandma's house in So.IL. Whenever we were there, my grandma would whip up these cookies. According to the handwritten recipe that I inherited from her estate she created this recipe on her own. My grandma was very innovative in the kitchen. I miss her cooking something fierce! I plan on getting more of her recipes out here in the coming days/weeks/months. :) I hope you enjoy these cookies. I have never made them myself (mostly because I never seem to have all the ingredients), but I ate them by the dozen all those memorable summers ago!

Ingredients

  • 1 box yellow cake mix
  • 1 1/2 cups rolled oats
  • 1/2 cup almonds, slivered
  • 1/4 cup chocolate chips
  • 1/4 cup pecan or walnut, chopped
  • 1/2 cup coconut
  • 1/2 pound raisins
  • 2 - eggs, beaten
  • 1/2 cup oleo (shortening)

How To Make my grandma's crunchy and chewy cookies

  • Step 1
    Preheat oven to 350 degrees and prepare cookie sheet (s) by spraying your favorite non-stick spray.
  • Step 2
    Mix all dry ingredients together.
  • Step 3
    Add oleo (shortening) and beaten eggs to dry ingredients.
  • Step 4
    Stir thoroughly, dough will be very stiff.
  • Step 5
    Drop by rounded teaspoonful on to prepared cookie sheet(s)
  • Step 6
    Press dough with a fork dipped in cold water.
  • Step 7
    Bake 12-15 minutes until golden brown.
  • Step 8
    Let cool on cooling rack and store in a airtight container.
