These cookies are one of my husband's favorites.He likes them so much that he called them Feliz Navidad cookie. He requests them every year around Christmas.My daughter Adaliz loves them too.

Ingredients

  • 1 c
    brown sugar, light
  • 1/2 c
    sugar
  • 1 stick
    unsalted butter,soft
  • 1 stick
    margarine,soft ( can use butter)
  • 1 c
    old fashion oats
  • 2 tsp
    vanilla extract
  • 3/4 c
    canola oil or vegetable oil (not olive oil)
  • 3 1/2 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1 Tbsp
    cream of tartar
  • 3/4 c
    chocolate chips
  • 1 c
    fruity pebbles cereal or rice krispies
  • 1 large
    egg

How to Make Feliz Navidad Cookies

Step-by-Step

  1. Mix well the sugars,margarine ,butter.Add egg,vanilla and oil.Stir in remaining ingredients.
  2. Cover and chill for one hour.Drop by rounded teaspoonfuls 2 inches apart onto greased baking sheet.Bake 10-13 minutes in 350 F preheated oven.
