I first tried these about ten years ago and they quickly became one of my favorite cookies. The kids love them too!

Ingredients

  • 1 c
    butter, softened
  • 3/4 c
    granulated sugar
  • 3/4 c
    packed brown sugar
  • 2 large
    eggs
  • 1 tsp
    vanilla extract
  • 1 1/4 c
    all purpose flour
  • 1/2 tsp
    salt
  • 1 tsp
    baking soda
  • 1/2 tsp
    ground cinnamon
  • 3 c
    quick or old-fashioned oats
  • 1 pkg
    (10 oz.) hershey's cinnamon baking chips

How to Make ELLEN'S CINNAMON OATMEAL COOKIES

Step-by-Step

  1. In a large bowl, combine butter, granulated sugar, brown sugar, eggs and vanilla extract.
  2. In another bowl, combine flour, baking soda, salt and cinnamon.
    Gradually add to the butter/sugar mixture.
  3. Stir in the oatmeal and the morsels.
  4. Drop by rounded tablespoon onto an ungreased baking sheet.
  5. Bake in a preheated 375º oven for 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crisp cookies. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
  6. NOTE: You can substitute Nestle Butterscotch morsels for the cinnamon chips, for a slightly different taste.
  7. Here are the Cinnamon Chips I buy. They are sometimes hard to find, hence the above substitution.
