ellen's cinnamon oatmeal cookies

I first tried these about ten years ago and they quickly became one of my favorite cookies. The kids love them too! 07-12-14

Ingredients

  • 1 cup butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 3 cups quick or old-fashioned oats
  • 1 package (10 oz.) hershey's cinnamon baking chips

How To Make ellen's cinnamon oatmeal cookies

  • Step 1
    In a large bowl, combine butter, granulated sugar, brown sugar, eggs and vanilla extract.
  • Step 2
    In another bowl, combine flour, baking soda, salt and cinnamon. Gradually add to the butter/sugar mixture.
  • Step 3
    Stir in the oatmeal and the morsels.
  • Step 4
    Drop by rounded tablespoon onto an ungreased baking sheet.
  • Step 5
    Bake in a preheated 375º oven for 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crisp cookies. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
  • Step 6
    NOTE: You can substitute Nestle Butterscotch morsels for the cinnamon chips, for a slightly different taste.
  • Hershey's Kitchens brand cinnamon chips.
    Step 7
    Here are the Cinnamon Chips I buy. They are sometimes hard to find, hence the above substitution.
