ellen's cinnamon oatmeal cookies
I first tried these about ten years ago and they quickly became one of my favorite cookies. The kids love them too! 07-12-14

Makes about 4 to 5 dozen
Ingredients
- 1 cup butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/4 cups all purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 3 cups quick or old-fashioned oats
- 1 package (10 oz.) hershey's cinnamon baking chips
How To Make ellen's cinnamon oatmeal cookies

Step 1In a large bowl, combine butter, granulated sugar, brown sugar, eggs and vanilla extract.

Step 2In another bowl, combine flour, baking soda, salt and cinnamon. Gradually add to the butter/sugar mixture.

Step 3Stir in the oatmeal and the morsels.

Step 4Drop by rounded tablespoon onto an ungreased baking sheet.

Step 5Bake in a preheated 375º oven for 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crisp cookies. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Step 6NOTE: You can substitute Nestle Butterscotch morsels for the cinnamon chips, for a slightly different taste.

Step 7Here are the Cinnamon Chips I buy. They are sometimes hard to find, hence the above substitution.
