eggless kaluah chocolate chip oatmeal cookies
I was invited to a Holiday Cookie Exchange party - it's TODAY! Being allergic to eggs, I don't ordinarily make cookies for myself. And since my kids are grown and pretty much health nuts, I don't make cookies for them, either. Lo and behold, I found a two ingredient cookie recipe online - just bananas and rolled oats. I thought I would embellish a bit -- just those two ingredients seemed bland. So, I splashed and dashed and surprised myself with some pretty good cookies.

Makes 3 dozen cookies
Ingredients
- 6 large ripe bananas
- 1 1/2 teaspoons salt
- 1/2 cup kahlua (i used french vanilla flavor)
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground allspice
- 1/2 teaspoon pumpkin pie spice
- 4 1/2 cups rolled oats
- 2 cups dark chocolate chips

Step 1Preheat oven to 350F

Step 2mash bananas with spices and kahlua

Step 3Add oats and chocolate chips. Mix well. If it's too wet, add a little more oats. Too dry, splash a little Kahlua. Proportions depend a lot on the size of your bananas and the density of the oats.

Step 4Form into balls and press flat onto a parchment lined cookie sheet. Balls should stick together without being uncomfortably wet.

Step 5Bake about 15 minutes.
