I was invited to a Holiday Cookie Exchange party - it's TODAY! Being allergic to eggs, I don't ordinarily make cookies for myself. And since my kids are grown and pretty much health nuts, I don't make cookies for them, either. Lo and behold, I found a two ingredient cookie recipe online - just bananas and rolled oats. I thought I would embellish a bit -- just those two ingredients seemed bland. So, I splashed and dashed and surprised myself with some pretty good cookies.

Ingredients For eggless kaluah chocolate chip oatmeal cookies

6 lgripe bananas

1 1/2 tspsalt

1/2 ckahlua (i used french vanilla flavor)

1/2 tspvanilla extract

1/2 tspground allspice

1/2 tsppumpkin pie spice

4 1/2 crolled oats
-
2 cdark chocolate chips

1Preheat oven to 350F

2mash bananas with spices and kahlua

3Add oats and chocolate chips. Mix well. If it's too wet, add a little more oats. Too dry, splash a little Kahlua. Proportions depend a lot on the size of your bananas and the density of the oats.

4Form into balls and press flat onto a parchment lined cookie sheet. Balls should stick together without being uncomfortably wet.

5Bake about 15 minutes.
