coconut macaroons
These sweet and moist macaroons are very easy to make and are very good. I usually double the recipe. I've though about adding chopped dried pineapple and using rum extract instead of vanilla, just for the sake of trying something different, but haven't tried it, yet. Sounds good though, doesn't it?

Ingredients
- 1 1/3 cups coconut, shredded
- 1/3 cup granulated sugar
- 2 large egg whites
- 2 tablespoons all purpose flour
- 1/2 teaspoon pure vanilla extract
- 1/8 teaspoon salt
How To Make coconut macaroons

Step 1Place oven rack in middle position and preheat oven to 350 degrees F.

Step 2Grease a cookie sheet, or line with parchment paper.

Step 3Mix all ingredients together well.

Step 4Drop by level teaspoonfuls onto prepared cookie sheet.

Step 5Bake at 350 degrees F for 20 minutes.

Step 6Meanwhile, place another sheet of parchment on a flat surface where the macaroons will cool.

Step 7When macaroons are finished baking, remove from cookie sheet and place on parchment to cool.

Step 8Store in an air-tight container.
