This is my favorite oatmeal cookie recipe that I have used for forty years. I have included suggestions for some delicious variations, also. Bet you can't eat just one!

quick cooking oats (uncooked)
1 c
all purpose flour
1/2 tsp
baking soda
1 tsp
salt
3/4 c
butter flavor shortening
1/2 c
white sugar
1 c
firmly packed dark brown sugar
1/4 c
water
1 tsp
pure vanilla extract
1 large
egg

How to Make CHEWY OATMEAL COOKIES

Step-by-Step

  • 1Preheat oven to 350 degrees F.
  • 2Combine first four ingredients and set aside.
  • 3In the bowl of a stand mixer or a large mixing bowl, beat together remaining ingredients until creamy.
  • 4Add the flour and oat mixture and mix well.
  • 5Drop rounded teaspoonfuls onto a parchment lined cookie sheet or greased cookie sheet.
  • 6Bake at 350 degrees F for 12 to 14 minutes.
  • 7Remove from cookie sheet and place on parchment paper or foil on flat surface to cool.
  • 8As soon as cool, store in air-tight container.
  • 9Recipe may be doubled.
  • 10NOTE: Great add-ins include dried and chopped cherries or cranberries, chocolate chips, pecans or peanuts, raisins, butterscotch chips, chopped dried pineapple and coconut, white chocolate chips and chopped macadamia nuts.
