chewy oatmeal cookies
This is my favorite oatmeal cookie recipe that I have used for forty years. I have included suggestions for some delicious variations, also. Bet you can't eat just one!

Makes about 5 dozen
Ingredients
- 3 cups quick cooking oats (uncooked)
- 1 cup all purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 3/4 cup butter flavor shortening
- 1/2 cup white sugar
- 1 cup firmly packed dark brown sugar
- 1/4 cup water
- 1 teaspoon pure vanilla extract
- 1 large egg
How To Make chewy oatmeal cookies

Step 1Preheat oven to 350 degrees F.

Step 2Combine first four ingredients and set aside.

Step 3In the bowl of a stand mixer or a large mixing bowl, beat together remaining ingredients until creamy.

Step 4Add the flour and oat mixture and mix well.

Step 5Drop rounded teaspoonfuls onto a parchment lined cookie sheet or greased cookie sheet.

Step 6Bake at 350 degrees F for 12 to 14 minutes.

Step 7Remove from cookie sheet and place on parchment paper or foil on flat surface to cool.

Step 8As soon as cool, store in air-tight container.

Step 9Recipe may be doubled.

Step 10NOTE: Great add-ins include dried and chopped cherries or cranberries, chocolate chips, pecans or peanuts, raisins, butterscotch chips, chopped dried pineapple and coconut, white chocolate chips and chopped macadamia nuts.
