Another cookie recipe from long time friend who passed away due to a brain aneurysm. She always brought us a variety of her batches of cookies and we always enjoyed them. Want to pass them on for others to enjoy!

Ingredients

1/2 cup shortening
2 cups flour
1 - egg
1 teaspoon baking powder
1/2 cup brown sugar
1 tablespoon vanilla extract
1/4 teaspoon salt
1/2 cup sugar
1/2 cup crushed pineapple
1/4 teaspoon baking soda
1/2 cup finely chopped nuts

How To Make burke's soft pineapple cookies

Step 1

Cream shortening and sugar. Add egg, beating well. Add pineapple and vanilla; mix well.

Step 2

Gradually mix in dry ingredients and chopped nuts if desired.
Step 3

Drop by heaping spoonfuls onto greased cookie sheet. Bake at 375 degrees for 15 minutes.
