Another cookie recipe from long time friend who passed away due to a brain aneurysm. She always brought us a variety of her batches of cookies and we always enjoyed them. Want to pass them on for others to enjoy!

  • 1/2 c
  • 2 c
  • 1
  • 1 tsp
    baking powder
  • 1/2 c
    brown sugar
  • 1 Tbsp
    vanilla extract
  • 1/4 tsp
  • 1/2 c
  • 1/2 c
    crushed pineapple
  • 1/4 tsp
    baking soda
  • 1/2 c
    finely chopped nuts

How to Make Burke's Soft Pineapple Cookies


  1. Cream shortening and sugar. Add egg, beating well. Add pineapple and vanilla; mix well.
  2. Gradually mix in dry ingredients and chopped nuts if desired.
  3. Drop by heaping spoonfuls onto greased cookie sheet. Bake at 375 degrees for 15 minutes.
