allergy friendly peanut butter/ sunbutter cookies

This recipe came out of the wood works for my daughters 3rd birthday just a few weeks after being Diagnosed with food allergies. I want to Credit Doreen Fish because i used her coconut flour sugar cookie recipe as a base for mine. I substitute a few ingredients for allergy friendliness and added a few for spunk!

Ingredients
- 4 - large eggs
- 3/4 cup sugar
- 1/2 teaspoon gluten free vanilla
- 1/4 teaspoon salt
- 1/2 cup melted ultra refined coconut oil (can be replaced with butter or other oil)
- 3/4 cup sifted coconut flour
- 1/2 cup sun butter
- 1/2 cup natural crunchy peanut butter (you can ommit and replace with sunbutter to make this nut free)
How To Make allergy friendly peanut butter/ sunbutter cookies

Step 1Preheat oven to 375

Step 2Wisk eggs until frothy then combine with sugar, melted oil,vanilla and melted PB and sun butter. Mix with hand or stand mixer on low till well combined.

Step 3Sift in the Coconut flour and mix by hand with a wooden spoon, be careful not to over mix. Let rest 5-10 minutes to allow the coconut flour to absorb the liquids.

Step 4knead the dough by hands a few times till all the dough comes together.

Step 5form ping pong ball sized dough balls and place on a ungreased dark colored pan. then press down with a fork in a cross hatch pattern

Step 6bake for 15 minutes. let cool before transferring.
