aunties chocolate zucchini bread

My aunt has been making this bread for over 20 yrs and it never ceases to amaze me how quick it goes.

Ingredients

  • 3 large eggs
  • 1 cup canola, vegetable or coconut oil
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 2 cups peeled, shredded zucchini
  • 2-1/2 cup flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon baking powder

How To Make aunties chocolate zucchini bread

  • Step 1
    Heat oven to 350. Lightly spray 2 loaf pans w/ cooking spray. In lg bowl, beat eggs, oil, sugar and vanilla until smooth.
  • Step 2
    Stir in zucchini. In bowl, combine all dry ingredients, add to zucchini mix. Mix well w/ spoon. Pour mix evenly into loaf pans.
  • Step 3
    Bake 1 hr, or until a toothpick inserted in center comes out clean. I usually check it at 50 mins. You want it to be moist, not dried out.
