My aunt has been making this bread for over 20 yrs and it never ceases to amaze me how quick it goes.

Ingredients
- 3 large eggs
- 1 cup canola, vegetable or coconut oil
- 2 cups sugar
- 1 teaspoon vanilla
- 2 cups peeled, shredded zucchini
- 2-1/2 cup flour
- 1/2 cup cocoa powder
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon baking powder
How To Make aunties chocolate zucchini bread

Step 1Heat oven to 350. Lightly spray 2 loaf pans w/ cooking spray. In lg bowl, beat eggs, oil, sugar and vanilla until smooth.

Step 2Stir in zucchini. In bowl, combine all dry ingredients, add to zucchini mix. Mix well w/ spoon. Pour mix evenly into loaf pans.

Step 3Bake 1 hr, or until a toothpick inserted in center comes out clean. I usually check it at 50 mins. You want it to be moist, not dried out.
