My aunt has been making this bread for over 20 yrs and it never ceases to amaze me how quick it goes.

Ingredients

3 large
eggs
1 c
canola, vegetable or coconut oil
2 c
sugar
1 tsp
vanilla
2 c
peeled, shredded zucchini
2-1/2 c
flour
1/2 c
cocoa powder
1/2 tsp
salt
1 tsp
baking soda
1 tsp
cinnamon
1/4 tsp
baking powder

Step-By-Step

1Heat oven to 350. Lightly spray 2 loaf pans w/ cooking spray. In lg bowl, beat eggs, oil, sugar and vanilla until smooth.
2Stir in zucchini. In bowl, combine all dry ingredients, add to zucchini mix. Mix well w/ spoon. Pour mix evenly into loaf pans.
3Bake 1 hr, or until a toothpick inserted in center comes out clean. I usually check it at 50 mins. You want it to be moist, not dried out.
