strawberry wine jelly topped cheesecake

This is a long time favorite of mine and served at many family events. You may top it with any fruit favorite ... My children request this recipe favorite each holiday and I don't think Christmas would be the same without baking atleast 3-4 of these Beauties. Of course the fruit options change and often Cherries are atop this favorite at Christmas;

Ingredients

  • 3 cups graham crackers, crushed
  • 1/3 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/2 cup butter, melted
  • 24 ounces cream cheese, room temperature
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla extract
  • 4 - eggs, separated
  • 8 ounces jar strawberry wine jelly-
  • 2 pints strawberries, fresh

How To Make strawberry wine jelly topped cheesecake

  • Step 1
    Graham cracker crust- In a med bowl-To 3 c of crushed graham cracker crumbs add sugar,cinnamon, and melted butter. Press into bottom and sides of a 9" buttered springform pan. Bake 350* 5 min and cool
  • Step 2
    Reduce heat oven to 325*- In a mixing bowl or kitchen aide (my choice) beat ur 24 oz of room temp cream cheese- add sugar, vanilla and egg yolks, combine low until blended. whisk your 4 egg whites in a small bowl until soft peaks form and add on low to your mixture. Pour over crust. Bake for 1 hr or until center is almost set. Be sure not to overcook. No need for a water bath method with this favorite cake of mine:)
  • Step 3
    Remove from oven- Cool overnite -remove from pan and arrange on your favorite plate. Top with Auntie Mae's Strawberry Wine Jelly ( or Fruit Jam) swirl with spatula for a nice finish look and then top and arrange your fresh picked or purchased Sliced strawberries on top. Serve and smile")Enjoy
